Chocolate – a hands on introduction to the Food of Gods

Master chocolatier Gloria Dominguez Martinez, aka Mama Bombon, is an extraordinary chocolatiere. Her passion for chocolate is as infectious as her skills are impressive. Gloria has worked on plantations and learn her trade while living in South America with her young son – a real life Vivienne from “Chocolat”!

This hands on class starts with an introduction to Cacao – food of Gods. the history of chocolate, the importance of tempering and the difference between coverture, ganache and chocolate. We start the practical work by learning how to use top quality couverture to enrobe Mama Bombon’s signature ganaches before learning key decorating skills including piping, transfers, textures and natural toppings such as cacao nibs and metallic powders.

The class finishes with a celebratory glass of bubbly once novice chocolatiers have filled beautiful boxes with their hand made chocolates, guided by Gloria’s wonderful ideas for gift wrapping and presentation.
